Creamy and naturally sweet Coconut-Banana Latte or Tea (Vegan & Paleo)

If you follow my blog, you will know that I like to share some of my favorite Paleo treats. In a nutshell, eating Paleo means eating lots of veggies, lean protein and some fruit. And this also means going dairy, gluten, grain and sugar free. Besides helping me look my best, this diet keeps my energy levels up throughout my day. After all, this mom is not just keeping up with an active Kindergartner, but also an action- packed career. Not to mention, my daily workouts.

Ready for today’s yummy recipe?
With this in mind, I am sharing one of my favorite ways to sweeten up your morning … or afternoons, or evenings, for that matter with this delicious banana-coconut coffee or tea cream. This recipe whips up easily in a blender and keeps in the fridge for several days. The recipe is inspired by Giovane’s coffee in Vancouver’s Fairmont Pacific Rim hotel.
Deliciously smooth coconut-banana cream which will turn your coffee or tea into a tropical flavour explosion.
Coconut-Banana Latte or Tea (Vegan and Paleo)
1 can (400 ml) full fat coconut milk (I only buy BPA free ones)
1-2 medium sized ripe bananas (depending on desired sweetness)
1 cup soy milk
1 shot of espresso, a small cup of coffee or tea
To make the coconut-banana cream:
- Add the coconut milk and banana(s) to a high speed blender and blend until completely smooth and blended (about 2 minutes).
To make the latte, coffee or tea:
- Add about 5 tablespoons of the prepared cream to the soy milk and heat (on the stove top, microwave or in a frother). In a mug, add the espresso shot, coffee or tea and pour the steamed cream mixture on top. Enjoy very much!

See how easy that is? I like to treat myself to this delicious treat whenever I have to get up extra early, whenever I manage to grab a moment of quiet time on the weekend or after a long day.
