Quick and healthy Vanilla Snowballs (Gluten free, Vegan & Paleo)
Ah, the holiday season. Often a very busy time. But also one where we like to indulge a bit … or a lot! If you have cut gluten, dairy and sugar out of your diet, this can be a very challenging and tempting time. Everyone around you is eating all of the stuff you can’t have! But wish you could eat too. That’s not fun. It’s easy to feel a bit deprived,right? Acquiring your new eating habits was not easy. And now that you feel so much better, you don’t really want to compromise that over the holidays either. And you’d rather not start from scratch in the New Year. So what should you do?
You want to enjoy the treats of the season without any regrets?
Don’t fret. With a little creativity and planning you can have your (gluten, dairy and sugar free) treats (and eat them too). Once again, Pinterest to the rescue! There are literally hundreds of amazing recipe ideas! From biscuits to pecan sweet potatoes, from chocolate mouse to stuffing and everything in between. I’ve tried many of them and am always surprised how great they are. Now, I actually prefer most of the paleo version. I can indulge my sweet tooth, without feeling guilty afterwards.
This is where you may ask, “Simone, who has time to make stuff from scratch?”
I get it. Time is at a scarcity during the holidays and our household is no exception. There is something about baking at Christmas though. I grew up watching and helping my grandmother make many different types of delectable Christmas cookies. Of course, those were full of sugar, butter and while flower. I feel so much better giving these to my little one. Yes, some traditional recipes take more time – like original German Lebkuchen (gingerbread). But most take the same time as their less healthy counterparts. And others, are actually faster!

I’d like to share one of those with you this week. It’s a recipe for Vanilla Snowballs. They taste just like Ferrero Giottos, minus all the stuff your body (or family) doesn’t need. These ones are not only super delicious, but also ultra heathy and only take 15 minutes to make! They don’t even need to be baked. Check – a tasty treat win-win. And very popular at our house! I double up the recipe, but they don’t last more than a few days. Put on some holiday music and give them a try.
Ultra yummy, quick and healthy Vanilla Snowballs (Gluten-free, Vegan & Paleo)
Makes 15 small irresistible balls of heaven
1 cup shredded coconut
¼ cup cashews
1/3 cup walnuts
3 tbsp. Coconut oil
2 tsp. Honey
1 tsp. Vanilla flavouring
½ cup extra shredded coconut to roll the balls in
- In a food processor of blender, combine the cashews, walnuts and shredded coconut (except the ½ cup of shredded coconut meant for rolling) until they are ground and well blended
- Add the coconut oil and honey and mix well.
- Using wet hands, shape small balls out of the dough, pressing them tightly to ensure they are firm
- Roll the balls in the extra shredded coconut.
- Keep them in the fridge. Done!
See how easy that is! I hope you enjoy these little treats as much as we do. They are perfect for sharing with others too and gifting. And when the New Year comes around, you won’t have to go on that juice cleanse after all.
